This breakfast (or anytime!) bowl is packed with incredible nutrients that bring out your inner radiance. It is insanely delicious, grounding, and satisfying!

Helpful Tip: I like to cook quinoa and divide it into half cup portions, put it in Ziploc or stasher bags, and store it in the freezer. It defrosts quickly and makes it easy to throw into recipes.

Nourishing and Grounding Breakfast Bowl

Ingredients:

¼ Cup Cooked Quinoa

1 Small Potato or Sweet Potato (See Note)

½ Cup Chopped Fennel

¼ Cup Chopped Broccoli

¼ Cup Chopped Mushrooms

¼ Cup Chopped Asparagus

¼ Pound Humanely Raised Nitrate Free

Pork Breakfast Sausage

½ Teaspoon Turmeric

½ Teaspoon Cumin

Salt and Pepper to taste

Handful of Microgreens

Sauerkraut (optional but tastes delish and is amazing for gut health!)

Directions:

Over medium heat, cook sausage until cooked through. Remove from the pan and add the potato and cook about halfway. Add in the fennel and broccoli. After about 6 minutes or so, add in mushrooms and asparagus and season everything with turmeric, cumin, salt, and pepper. When everything is cooked through, add in sausage and cooked quinoa. Top with sauerkraut and a handful of microgreens. So satisfying and filling. Enjoy - Leah

Note: I like to cook the potato prior to save some time. If your potato is already cooked, add it in with the mushrooms and asparagus. I sometimes add in chopped apple too :)
